The weak of heart, look away now, this is the king of all breadmaking wheats, the strongest of the strong, and has a very slightly darker colour to the flour.  This is only grown in the UK on contract by selected growers where we know that the quality can be met.

This has very strong gluten properties and a very high Hagberg falling number of 450-500, a protein around 14% and extensibility for days!
